Breakfast:

  • Steel cut oats mix

    • Ingredients for oatmeal:

      • 2 cups of steel cut oats

      • 6 cups water

      • 2 TBSP of chia seeds

      • 1 TBSP of flax seeds

      • fully peeled, finely chopped fresh ginger (1-2 inch knob)

      • Cinnamon

      • Chopped prunes

      • Chopped/pitted Medjool dates

    • Recipe:

      • Add all ingredients to instant pot

      • Set to high pressure for 6 minutes

      • Allow natural release

  • Stewed Apples

    • Ingredients:

      • 6 to 8 apples, washed and chopped into larger chunks (peels left on)

      • 1 cup of water

      • Cinnamon

      • Fully peeled, finely chopped fresh ginger (1-2 inch knob)

      • Chopped prunes

      • Chopped/pitted Medjool dates

    • Recipe:

      • Add ingredients to instant pot

      • Set to “steam” for 3 minutes (or 4 minutes for extra firm apples)

      • Manually release pressure when 3 minutes are up

      • Open lid and turn off pot when you’ve done the pressure release

  • Smoothies made with oat milk and frozen fruit and spinach

Lunch/Dinner Meals:

  • Pureed black beans

  • Rotisserie Chicken with sides

  • Pulled pork with sides

  • Ground beef or turkey (crumbled & cooked in a frying pan) with sides

  • Spaghetti Squash with Whole Foods Marinara Sauce

  • Dairy Free Mashed Potatoes
